Preliminary Research of Discrimination of Adulterated Honey with Physical Methods

The discrimination between pure honey and adulterated honey were studied by investigating their common physical characteristics and rheological properities.The pH value,conductivity,sugar content,viscosity,density and rheological properties of pure honey and such honey samples adulterated with sucrose,CMC-Na,pectin,starch,calcium chloride,urea and water were measured.The results showed that both the pure honey and the honey adulterated with sucrose were of non-Newtonian fluids.So they could be distinguished by the changes of their viscosity with adding water but not the difference of their rheological properties.Due to the differences in their theological properties and some other physical properties,the other examined adulterated honey could be distinguished from the pure honey.
