Study on Antioxidant Activity of Sugarcane Extracts by DPPH Assy

Extract the active substance from sugar cane, and determine its antioxidant activity by DPPH assy. Also study the effects of pH value, heating temperature and heating time on radical-scavenging activity. The result showed high activity of all the extracts. It implied pH have significant effect on it, but heating almost have no effect. We presume the antioxidant in sugar cane is polypheol.
