Study on preparation and stability of soybean protein/PAN blend solution

The preparation and stability of soybean protein solution and soybean protein/polyacrylonitrile (PAN) solution were studied. The results showed that the solubility of soybean protein can be improved by increasing temperature and pH value. The dissolution rate of soybean protein was raised by appropriately increasing sodium thiocyanate concentration. The appropriate conditions of soybean protein dissolution were as followed soybean protein 6% by mass fraction,temperature 80℃ ,sodium thiocyanate 40% by mass fraction,pH value 9.0. The addition of treating agent containing sulfur can improve the dispersion of soybean protein in PAN solution and the stability of soybean protein/PAN solution with little help to the solubility of soybean protein.
