Effects of Magnetized Water Treatment on the Antioxidant Capacity of Germinated Mung Bean

To supply the application support of bean sprouts produced by magnetized water,the effect of magnetized water on the antioxidant capacity of germinated mung bean was investigated. The magnetized water was used to cultivate bean sprouts,the tap water treatment was as control group. The content of vitamin C,the total polyphenol and total flavonoids in the germinated mung bean were determined every 12 hours. The basic situation of germinating mung bean was also recorded. The effect of mung bean sprout extract on hydroxyl radical,superoxide anion radical and DPPH radical scavenging rate and total reducing power were determined when the germinated mung bean was edible. The results showed that the VC and total flavonoids of magnetized water treatment group were significantly higher than that of tap water treatment group(P0.05),but there were no significant difference in total polyphenol(P0.05). The three kinds of free radical scavenging effect and the total reducing power of the magnetized water treatment group were significantly higher than those in tap water treatment group(P0.05). The experiment showed that the use of magnetized water instead of tap water could significantly increase the content of antioxidant components in mung bean sprouts and improve the antioxidant activity of mung bean sprouts.
