Study on the antioxidant effect and stability of piperine

The antioxidant effect of natural piperine was determined by the method of DPPH·(1,1-dipheny-2-picryl- hydrazyl free radical).The effects of light,heat and pH on its stabilities were also studied.As a result,the natural piperine showed an antioxidant capability approximate to 60.05% of the vitamin C.and it could exist stably in acidic medium and was rather stable for temperature at 60℃ in two hours,but absorbance could be decreased by natural illumination.
