Sensory Test for the Palat Ability of Chinese and Japanese Rice Cultivars by Chinese Panels and Japanese Panels

The sensory test for palat ability was perfor medon Chinese and Japanese rice cultivars by Chinese and Japanese panels. Asaresult, no significant difference in preference of rice for the Chinese and Japanese panels, and it is no problem to use the sensory test for palat ability of the Japanese style to judge the Chinese rice cultivars. However,the rice cultivars which Chinese and Japanese panels gave different evaluation of the palat ability, the preference when the overall eating-quality was determined, the difference of the evaluation criteria and preference when the panels judged the appearance and hardness, the caution should be considered.
