Functional Lipids桽tructured Lipids QIAO Guo-ping, WANG Xing-guo

Structured lipids, modified products of natural lipids, include short, mediumand long-chain fatty acids. Special compositions of fatty acid and their special position in the same glycerol make it have some special physiological function and nutrition. Structured lipids can be produced by chemical or enzymatic methods.
