DGGE technique and its applications in research on food microbiology

Denaturing gradient gel electrophoresis(DGGE)technology is a molecular fingerprint technique for microbial flora analysis.With advantages of high reliability,repeatability and convenience,etc.,it has been widely used in molecular microbial ecology research.The principle of DGGE technique and its applications in the diversity analysis of food microorganisms,dynamic monitoring,rapid detection and other applications were reviewed in this paper,and the limitations and perspectives in applications were also discussed.
