Study on extraction technology of polyphenols from germinated foxtail millet

The effect of germination on changes in content of polyphenols was studied,and then response surface methodology was used to optimization ultrasonic extraction conditions of polyphenols in germinated foxtail millet.Based on single–factor test,Box–Behnken test about independent variables(ethanol concentration,extraction time and solid–liquid ratio)and dependent variable(extraction yield of total polyphenols)was designed.The results showed that the content of total polyphenols increased significantly during germination(ρ0.05).The optimum conditions were as following:ethanol concentration was 70%,extraction time was 8 min,solid–liquid ratio was 1∶30(g/mL),in this condition,and the extraction yield of total polyphenols was 2.65 mg/g.
