The impact on stability of lycopene in the micro particulate system

Lycopene,with the significant biological activities of antitumor action,antioxidant effect and liver protecting etc.,is a safe and harmful less carotenoids pigment.Under the conditions of high temperature,optical illumination and moisture,it becomes instable and easily leads to degradation that hinders its application.Studies on preparation technology of micro particulate system,used for improving stability of foods,which including nanometer system,emulsion system,microcapsule system and cyclodextrin inclusion compound etc.,has been thought highly.The factors of influence on lycopene stability in the process of preparing were reviewed in this paper,and it will provide reference to its development and application.
