PRESENT SITUATION AND ACHIEVEMENT ON THE STUDIES OF WHEAT PROTEIN IN CANADA

Wheat protein was studied meticulously by every major countries of wheat productioa in the world. Canada stay in the advanced situation in the level of these studies. The most important criteria are protein content and protein quality of wheat grain when wheat quality eveluated. Remarkable successes are achieved in the studies of increasing protein content and improving protein functional quality of wheat grain by the ways of cultivation and breeding in Canada. The most important aspects are the negative correlation between yield and protein content of wheat grain can be break down by the ways of cultivation and breeding to a certain degree. It was not notable successes in the studies of improviag nutritional quality of wheat grain.
