Fluorescence Stability of Three Different Honeys Harvested in Fujian Province

The object of this paper is to estimate the stability of the fluorescence from three types of honey harvested in Fujian province(longan honey, lichi honey, and schefflera honey). These stability studies include effects of metal ions, heat treatment,and photo irradiation on fluorescence of honey. Results indicate that extra metal ions( Na+、 K+、 Ca2+、 Mg2+、Cu2+、 Zn2+、 Pb2+、 Cd2+) have no influence on the fluorescence of honey as the added concentration is 200mg/kg. After been heated for 1 h under 50 ℃ and 70℃, fluorescence of honey do not show significantly change. However, enhancement of fluorescence intensity is observed under 90 ℃, and the increase percent is calculated to be 45 %, 21 %, and 10 % for longan honey, lichi honey, and schefflera honey, respectively. In photo-stability experiments, photobleaching of fluorescence from honey is observed. For longan honey and lichi honey, reduction of fluorescence is calculated to be 30 %and 25 % respectively, and the profile of fluorescence emission is unchanged. For schefflera honey, reduction of fluorescence from Em 363 is calculated to be 54 %.Moreover, the component of Em 363 is degraded and its emission peak is shifted to 397 nm. Above all,fluorescence from honey exhibit good stability towards metal ions and heat treatment. In addition, protection from photo irradiation should be considered to avoid photobleaching and photodegradation.
