Cause Analysis of Soy Sauce's Bottle-swelling and its Prevention

Gas production of soy sauce may cause bottle-swelling or bag expanding and bring economic losses to soy sauce factories and endanger people in our daily usage. With methods of the pour plate and the anaerobic culture technology,this paper compared the physical-chemical index and the microorganism index( quantity,type) of expanding and non-expanding soy sauce of Sichuan Qingxiangyuan Condiment Company. The results indicated that soy sauce 's physical-chemical index was normal,the microorganism index was abnormal,and the quantity of the mold and yeast in bottle-swelling soy sauce exceeded. After the investigation of soy sauce factory's manufacturing technology,the solutions of raw material production,material package and soy sauce sterilization were proposed to solve the bottle-swelling problem of soy sauce.
