Analysis of the Quality Improvement Technology of Rain Picking Oolong Tea

Analyzing the partially fermentation process of Oolong tea aims to improve the quality of rain picking Oolong tea. In this study, we propose the best fermentation process of Oolong tea, using air conditioning controled the environment of fermentation process:temperature(18~23 ℃),humidity(60%~75%). Removed moisture on tea leaves by using 6CT-65 type tea dryer,and then using the mixed light withered leaves. Tossing leaves from mild to severe can effectively improve the rainy day picking Oolong tea quality. At the same time,studying on tea garden shelter measures also helped us propose the future research directions of rain picking Oolong tea quality improvement.
