Advanced on Chilled Meat

JIANG Qi;WANG Ye;LIU Ying;YI Xuan;College of Food Engineering and Nutritional Science,Shaanxi Normal University;  
As a new breed of chilled meat with health and safety,tender and delicious,easy to cut,etc.,have demonstrated good market prospects. This paper review the research status of chiued meat and problems from processing, transportation,preservation and meat products at home and abroad,and in the end prospects in the future direction of the meat processing area.
