The Effect of Physiological and Biochemical Characters of Dioscorea alata L. in Different Storage Conditions

Dioscorea alata L. is popular in Chaoshan area and play a significant role in local folk customs. The similarities between other vegetables and fruits,browning discoloration and nutrition reducing are two major problems during storage of Dioscorea alata. This paper analyzes the physiological and biochemical characters of Dioscorea alata under different storage conditions and seek the most appropriate one. The storage conditions of Dioscorea tubers are included:dried and soaked at room temperature,peeled epidermis and soaked in water at room temperature,soaked in water at room temperature,peeled epidermis and stored in refrigeratory at 4 ℃,stored in refrigeratory at 4 ℃. Furthermore,water VC and PPO activation are measured in different storage times. The experiment results show that the best method to store tubers of Dioscorea alata is stored in cold. This condition decreases the content of VC as well as depresses the activation of PPO. Compared to other storage conditions,that stored in refrigeratory at 4 ℃ can keep Dioscorea alata L. fresh longer and nutrition loss less.
