Research Progress on Candied Fruit Preservation Technology

The processes and preservation methods in the candied fruit products are summarized. The characteristics,application and shortage of the sulfur-containing preservation techniques are analyzed. And the new production technology,research and development of new type health protection preserves, desulfurization and no-sulfur addition security additive development and application on candied fruit products and technology are also prospected.
