Fermentation Technology of Shallot Wine

This paper takes shallot as raw materials,development of low- alcohol wine with rich nutrition. In this experiment,the optimum fermentation condition and formulation are determined by single factor and orthogonal test. The results show that:the radio of material to liquid is 1∶10 normal juice;fermentation initial p H 6.5,inoculation amount 1.0 g/L,fermentation temperature 25 ℃ and 0.08% chitosan clarification, light transmissionrate of 97.3%. The deployment of 13% shallot wine alcohol content,total sugar content of 100 g/L,and total acid content 5.0 g/L gets pale orange red, clear and transparent,with shallot unique aroma and wine flavor,also to retain maximum nutritional content of shallot.
