Optimization of Rice Bran Protein Extraction from Defatted Rice Bran by Mixed Enzymes

In order to obtain the optimal extraction condition for rice bran protein from defatted rice bran by cellulase and papain, the optimization ratio of them is selected. The orthogonal array experiment is used to explore the effect of solidto- liquid ratio, extraction time, extraction temperature and mixed enzymes addition as well as their interactions on the yield of rice bran protein. The results indicate that the cellelase to papain radio is 7∶3; the results of the orthogonal array experiments are as follows: 1∶10, 2h, 55 ℃, 4%. Under these conditions, the yield of rice bran protein is 76.75%.
