Analyzing Backward Factors of Higher Education of Chinese Cuisine

The development of Chinese cuisine higher education has made a remarkable achievement for almost 2 0 years.But view the situation as a whole;it is falling behind relatively.The relation primary factor is the history.This article will expound itin each side: It is limited to the traditional ideas and the old education pattern;L acking qualified teacher in personal;Backward in subject and teaching research;The negatives influence of the traditional catering trades and“the factionalist setup of cooking's ideas”and so on.
