EFFECT OF DIFFERENT CULTIVATED TIME AND PH ON THE NUTRITIONAL VALUE OF THE PROTEIN IN PHOLIOTA ADIPOSA MYCELIA

The amino acids of Pholiota adiposa mycelia in different cultivated time and PH were detected.The international nutrient value assessment method was applied to the overall assessment of the protein nutrient value of Pholiota adiposa mycelia.The assessing result showed that the total essential amino acid in Pholiota adiposa mycelia was very high,making up to about 40.0% of the total amino acids.The nutrient value of Pholiota adi- posa mycelia cultivated at 25℃,pH=6.0 and cultivated for 4d was higher.The amino acids score(AAS), chemistry score(CS),essential amino acids index(EAAI),biological value(BV),Nutritional index(NI) and score of ratio coefficient of amino acid(SRCAA)of its protein were 91.0,70.6,88.36,84.61,40.34 and 78.75 respectively.
