With the development of Chinese opening and reformation,people’s economic level has been increased rapidly.So the request of food hygienic quality,especially meat-product quality is more and more strictly.As a result,in the course of meat-product production,Spreading the administrative system of HACCP(Hazard Analysis Critical Control Point)will have profound significance.It can be fully used to analyze and control the main factors that are harmful to meat-product safety,improve hygienic quality,and speed the process of Chinese green-food development.
