The present paper describes changes in respiratory intensity, ethylene evolution and contents of carbohydrates,organic acids, pigments in tomato fruits during growth and development. The results of our study indicated that both respiration and ethylene evolution showed two turning points in green fruit period and physiological maturation period.Before the physiological maturation, the contents of carbohydrates and organic acids increased gradually, and then decreased gradually. Before the green fruit period, the fruit contained mainly chlorophyll, which reduced gradually thereafter till the physiological maturation. The fruits became red gradually with the increase of lycopene during the physiological maturation.
