By measuring the germination rate of pepper seeds and physiological quotaes under low temperature, the chilling tolerance of eight kinds of peppers during the germination of seeds and seeding were studied. The results showed that the reflection of pepper varieties on low temperature is different. The identifying temperature of the chilling tolerance during germination is 15℃and 20℃.During seeding, low temperature led to the increase of membrane permeability, the leakage rate of electrolytes and the content of soluble surgar in the leaves of pepper varieties, meanwhile, the symptoms of some cold injure appeared. Based on the various trend of physiological quotaes in different pepper varieties, the degree of chilling tolerance of eight kinds of pepper varieties were categoried as follows: the strongest(Malasan daojing, peking Qiemen,Sipintou),moderater(Xixianiujaowang,Bulgariajanjiao,Yilniuijiaojiao),the weakest(Luojiao 4?Luojiao 6).
