On high voltage electric field drying technology of beef

Objective:There are many disadvantages in production process of traditional beef jerky. It is necessary to introduce a new drying technology by which the quality of beef jerky is improved; Method: In this paper the drying experiment of cooked beef was done using high voltage electric field drying method with al:fferent electrodes;Result: Experimental results showed that the cooked beef can be dried in high voltage electric field and the drying rate in electric field of reedle like electrodes is higher than that of plates;Conclusion:High voltage electric field drying technology will bring into a new era in beef jerky domain.
