Research Progress of Microbial Toxins in Cereals

Microbial toxins are the secondary metabolites of cereals contaminated by molds, and have serious security risks to human and animal health. In the processes of production, processing, transportation, storage and marketing, grains and their products are contaminated by mold. The contamination of microbial toxins in cereals was reduced only by effective prevention and control measures. In this paper, the microbial toxins and toxicity hazards in cereals were reviewed, and several kinds of microbial toxins with higher contamination in cereals, detoxification methods, detection methods and control schemes were analyzed, aiming to provide some reference for the prevention and control of microbial toxins and the food safety.
