Study on the Preparation and Properties of Modified Corn Starch

This paper was based on the orthogonal experiment. The optimum oxidation conditions of modified corn starch(Corn starch CS) were as follows: Reaction time 4 h, temperature 45 ℃, pH 9, and the amount of oxidant(sodium hypochlorite) 15 mL. The characteristics of denatured CS were compared and analyzed. It was found that the paste of the product had good fluidity and film-forming properties, and had excellent development space in the field of food.
