Effect of Acid Removal on the Quality of Mutton

Mutton is a kind of important meat food in people's daily life. The quality of mutton is easily influenced by many factors, including varieties, sex and age, acid disposal and nutritional status. Among them, the treatment of acid drainage is the most typical factor. In this paper, the effect of acid treatment on mutton quality was analyzed and discussed.
