Here reviewed are the factors affecting the potassium bitartrate precipitation in grape juice,such as temperature,potassium ion content,tartaric acid content,pH value as well as the variety and content of high molecular compounds of grape juice. Also introduced are the methods preventing the precipitation of potassium bitartrate in grape juice,such as freezing,freezing with seeding material,ion exchange,cation exchange,electrodialysis and neutralization with calcium.
