Analysis of the Contents of Nitrate,Nitrite and the Antioxidant Activities in Five Edible Wild Vegetables of Guizhou

The contents of nitrate,nitrite,Vc and the antioxidant activities in Amaranthus viridis L.,Mentha haplocalyx Briq.,Plantago asiatica L.,Kalimeris indica(L.) Sch.-Bip.and Taraxacum mongolicum Hand.-Mazz.were determined.The results indicated that the contents of nitrate and nitrite in five edible wild vegetables are lower than the critical content of ADI.The content of nitrite in Mentha haplocalyx Briq.,Plantago asiatica L.,and Kalimeris indica(L.) Sch.-Bip.reaches the standard of unharmful vegetables,but Amaranthus viridis L.and Taraxacum mongolicum Hand.-Mazz.do not reach that standard.The percentages of ·O~-_2 scavenged by the alcohol extracts from leaves of Mentha haplocalyx Briq.and Plantago asiatica L.are higher than that of Amaranthus viridis L.,Kalimeris indica(L.) Sch.-Bip.and Taraxacum mongolicum Hand.-Mazz..The activity of SOD in Mentha haplocalyx Briq. is high also.These results showed that Mentha haplocalyx Briq.has good quality.
