Study on Components of Dehong Buffalo Milk of Yunnan Province

In this research, the percentage of lactose, fat, protein, TS and SNF from Dehong buffalo milk and Holstein milk were analyzed by milk analyzer. In addition, the compositions of protein were separated by SDS-PAGE and scanned using gel imaging-forming system. As a result, the contents of lactose, fat, protein, TS and SNF in Dehong buffalo milk were all significantly higher than those in Holstein milk(P0.01). CN dominates in milk protein from Dehong buffalo and Holstein cow. Compared with Holstein milk, the content of α-LA from buffalo milk was significant higher(P0.05), but the content of β-LG was significant lower(P0.05), and the contents of SA and CN were similar(P0.05).
