Rheological Behaviors of Collagen Solution

Rheological behaviors of natural collagen solution and the influences of concentration and temperature on the rheological behaviors were studied.The results showe that the elastic modulus(G'),viscous modulus(G″) and complex viscosity(η*) of collagen increase with increase of concentration,especially when collagen with a high concentration.The crossover frequency(f),at which transition from liquid-like to solid-like behaviors took place,shiftes toward lower frequencies with the increase of concentration,which is called pseudo-solid like behaviors.Loss tangent(tanδ) increases with the increase of concentration and gets maximum at 0.75% then decreases.However,G',G″ and η*of collagen all decrease while tanδincrease with an increase of temperature,which is indistinct below 25℃.The crossover f shiftes toward higher frequencies with the increase of temperature,which is called pseudo-liquid like behaviors.G',G″,η* and tanδare irregular and decrease to a very small value at 32.5℃,indicating that the configuration of collagen has changed.
