Characteristics of Fetal Bovine and Bovine Skin Collagens

Soluble collagens were prepared from fetal bovine and bovine skins respectively,by enzymatic method under low temperature.The morphology,moisture,isoelectric points and thermal stability of the collagens were determined,and the structure properties were characterized by FT-IR.The results show that the porous structure of the collagen from fetal bovine skins is more visible,and the moisture content in the inner structure of the fetal bovine skin collagen is greater than that from bovine skins,but the thermal stability is inferior to that from bovine skins.FT-IR spectrum shows that the collagen from bovine skins contains more mature crosslink structures compared with the fetal bovine collagen.It is suggested that the solubility of collagen decreases with the increasing age of the animals,due to its changing types and crosslink content.
