The progress in research on the application and mechanism of Lactic acid bacteria in reducing cholesterol

Lactic acid bacteria can not only affect beneficially the host animals by improving their intestinal microecological environment,but can also be used as alternative supplements to exert health benefits,including cholesterol-lowering effects on human.Researches in recent years have proved that some Lactobacillus,Bifidobacteria and Enterococcus can regulate lipid metabolism and reduce human serum cholesterol.This article reviewed the screening model and the probable mechanisms of the reduction of cholesterol by lactic acid bacteria,in order to provide theoretical foundation for further development of related products.
