Effects of probiotics on muscle quality in broilers

Objective To evaluate the influence of probiotics(Chang Jian Su)on the muscle composition of broilers.Methods 180 one-day old AA broilers were randomly divided into 3 treatment groups with 3 replicate pens per treatment and 20 individuals per pen.The group 1 was the control group;group 2 was given 10% Florfenicol,while group 3 was given 0.1% Chang Jian Su.Results The drip loss rate and cooking yield in Chang Jian Su group were significantly higher than those in the other groups(P0.05).Adding Chang Jian Suin water significantly increased the contents of crude proteins,crude fats and MDA,while significantly reduced the moisture content in breast meat(P0.05).Chang Jian Susignificantly increased the contents of iron and zinc in muscle while significantly decreased the contents of calcium and manganese in the muscle of 41-day broilers(P0.05).In addition,the total amino acids,delicious amino acids and essential amino acids in the breast meat in group 3 increased significantly,while that of saturated fatty acids decreased significantly(P0.05).Conclusion Supplement of Chang Jian Suin water can improve broiler′s muscle quality.
