Characterization of variation of tofu and soymilk output of soybean cultivars from Huang-Huai-Hai and southern China and identification of the elite cultivars

In breeding for tofu and soymilk output, one of the basics is to reveal the genetic variability in genetic resources and breeding materials. The present study aimed at characterization of variation of tofu and soymilk output in soybean cultivars from Huang-Huai-Hai area and southern China, another goal of this study is to screen and select elite sources for breeding programs. A sample consisted of 176 cultivars and breeding lines was used to study the genotypic variation of dried tofu output, wet tofu and dried soymilk by using the improved mini-specimen measurement technology for large samples in laboratory. There were large variation among the tested materials in dried tofu output, wet tofu and soymilk, with their ranges of 45.60~73.53 g, 368.74~622.14 g and 58.05~83.33 g respectively and their greatest values were 31.14%, 17.33% and 17.71% higher than their mean values respectively. Cultivars from Huang-Huai-Hai area and those from southern China both showed a similar low output while the number with high output was greater in southern China than in Huang-Huai-Hai area. Cultivars with high output of tofu and soymilk were mainly the summer planting season type. The number of high output cultivars released after 1995 were about the same as that released during a long period before 1995. Total 29 cultivars with high output of tofu and soymilk were screened, among them, 17 from southern China, 12 from Huang-Huai-Hai area. The three best cultivars, Nannongcaidou No.5, Nannongcaidou No.1 and Xiangchundou 16 with high output of dried tofu, wet tofu and dried soymilk were all from southern China. These elite cultivars can be used in both commercial production and breeding programs in the improvement of these three output traits.
