Study on preparation of industrial hemp protein isolates

The preparation of protein isolates(IHPI)from industrial hemp by alkali extraction and acid precipitation was investigated based on box-behnken design.The extraction parameters were optimized by response surface methodology.Results showed that the optimum extraction conditions were temperature 39.58℃,pH9.27,ratio of liquid to solid 24.22 and time 0.5h.pH 5.0 was preferable for the precipitation of hemp protein at which 96.38% protein was precipitated from hemp protein extraction supernatant.Under those optimum conditions the protein yield was 52.27% and protein concentrate reached 83.8%.
