Non-nutritive Sweetener——Sucralose

The structure,performance,methods of preparation,applications and development trends of sucralose are introduced.Especially,the methods to synthesize sucralose are described in detail and compared with each other.The advantages of per-protection reaction are mild condition and simple operation but its disadvantages are too long reaction course and too high cost of raw materials.The advantages of enzyme-chemical synthesis are high enzyme specificity and low(pollution) of organic solvents,but the disadvantages are too high cost of zymolysis and difficulty in separating intermediates.The advantages of the mono-blocked method are cheap and readily(available) raw materials,high selectivity and short reaction course.This method is most suitable for the preparation of sucralose in commercial scale.
